About the Lecture

Chemical Engineering in Food Processing
Food is a complex matrix with proteins, fats, carbohydrates, vitamins etc. and hence it makes Food Processing complex. Food product is for human consumption, so special attention is to be paid for maintaining microbial quality (food safety) and sensorial quality while retaining the nutrients. During mathematical modelling’ density, porosity and mass & thermal diffusivities cannot be assumed to be constants, as moisture content varies during processing. The talk presents a few case studies highlighting the application of chemical engineering principles to food processing.

Speaker Profile

Dr. K S M S Raghavarao
Dr. Raghavarao is basically a Chemical Engineer specialized in Food Engineering and Biotechnology. He obtained B.Tech, from Andhra University, direct Ph.D. from ICT, Mumbai (formerly UDCT). After PDF at NIST-Colorado and a brief stay at NIT, Warangal, he joined CFTRI in 1990 and took over as the Director of CSIR-CFTRI. After superannuation, he joined IIT Tirupati as Professor of Chemical Engineering.
He has guided 22 students/fellow scientists for Ph.D. in Food Engineering/ Biotechnology and at the moment guiding 3 in Chemical Engineering. He is recipient of prestigious NASI-Reliance and VASVIK awards for applied research. He is Fellow of prestigious National Academies (FNAE, FASc, FNAAS). He has over 160 publications, with ‘h’ index of 51 and citations over 6500, and about 28 International patents and 55 Indian patents.
He initiated several new research areas at CFTRI. He collaborated with several institutions as PI/Co-PI in 50 Grant-in-aid projects and 25 Industrial sponsored projects. Out of 30 significant achievements, 25 were converted into processes/technologies, out of which 15 were transferred to Industry. For Example, Virgin Coconut Oil (VCO) technology transferred to over 60 industries.
